Buttermilk Cornbread With Honey Butter
This has shaped up to be quite an eventful week and one of my favorite highlights was attending New York Comic Con. It was a great experience with lots to take in. One of my favorite parts was the comedy show, where I met Brian Posehn and saw Janeane Garofalo. I love watching live stand up shows and having a good laugh.
The long lines at Comic Con kept us standing in the cold air for awhile and got me craving some warm chili. I am working on a few different chili recipes this fall, and if you have any good tips, please send them my way 🙂 Any good chili needs a good corn bread along side it! This corn bread recipe has under 10 ingredients and is easy to prepare, but does not fail to deliver.
While corn bread and chili are a perfect match, having the bread with some sweet honey butter on top makes for a delicious treat on its own!
Ingredients: (yields 9 pieces)
- 1/2 cup of unsalted butter, melted
- 2/3 cup of sugar
- 2 large eggs
- 1 cup of buttermilk, shaken before pouring
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 cup of all purpose flour
- 1 cup cornmeal
- 1 stick of unsalted butter, softened
- 1/3 of a cup of honey
While the cornbread cooled I started on the honey butter.
In the mixer bowl I added 1 stick of butter and 1/3 of a cup of honey and mixed until smooth and combined.
Spread over the top of a warm cornbread slice and enjoy!
