Frozen Banana Bites
During the hot summer months I enjoy indulging in various types of frozen treats. One of my favorites is ice cream!
One ice cream that Matthew and I enjoy is Ben and Jerry’s Chunky Monkey. It is a creamy banana ice cream with fudge pieces and walnuts. Inspired by these flavors I wanted to create a healthy-ish frozen treat. I took peanut butter and chocolate, melted it down, and covered banana slices with it. Added some sprinkled walnuts on top and there you have it. A frozen treat that is easy to make, delicious, and perfect for those hot summer days.
Ingredients:
- 2 bananas
- 1 cup of bittersweet chocolate chips
- 1 tablespoon of peanut butter
- 1/3 cup of walnuts, chopped fine
I peeled and sliced 2 bananas into 14 pieces each. I set the banana slices aside for later.
I melted 1 cup of chocolate chips in a heat safe glass bowl over a gently simmering pot of water. To the melted chocolate I added 1 tablespoon of peanut butter, and stirred until incorporated.
I began assembling the banana treats by coating one banana slice at a time in the chocolate using a spoon.
I gently shook off the excess chocolate and placed the coated banana slices onto the waxed paper. Then I sprinkled the tops with finely chopped walnuts. Lastly I placed the banana slices into the freezer for 20 minutes and until the chocolate had set.
With only 30 minutes and 4 ingredients this is a perfect treat that you can make when you are craving something cool and sweet. These treats were gone almost as quickly as I made them. So you may just want to double the recipe!
The bittersweet chocolate mixes perfectly with the peanut butter. The frozen banana almost passes as ice cream itself! The chopped walnuts on top give some texture variety and great flavor.
