Chocolate Brownies

A happy father’s day to all fathers out there. It is always nice to bake a treat for someone to let them know they are special. A warm chocolaty, gooey, brownie with an ice cold glass of milk can really help celebrate the day!

A perfect brownie for me has a slightly crisp top with a moist, chewy, and chocolaty center. This recipe  I found on marthastewart.com does not fail to deliver.

Ingredients: (yeild 9 brownies)

  • 3/4 cup all purpose flour 
  • 1 tablespoon of dutch cocoa powder
  • 1/4 teaspoon of salt
  • 1 stick of unsalted butter, plus more for the pan
  • 3/4 teaspoon of instant espresso powder
  • 5 oz of semisweet chocolate chips
  • 3/4 cup of sugar
  • 1/4 cup light brown sugar
  • 3 eggs, at room temperature
  • 1 teaspoon of vanilla extract
  • 4 oz of semisweet chocolate chips for mixing in

I preheated the oven to 325 degrees.

I put a glass bowl on top of a pot of boiling water that had the heat reduced to make a double boiler. In the make shift double boiler on low heat, I melted 1 stick of unsalted butter and mixed in 3/4 of a teaspoon of espresso powder.

To the butter I added 5 ounces of semisweet chocolate chips, stirring until smooth. Once the chocolate was smooth I carefully removed the bowl from the heat.

Next I stirred in 3/4 of a cup of sugar and 1/4 of a cup of light brown sugar.

I mixed until it was well combined. To the chocolate mixture I added 3 eggs; one at a time. Then I added 1 teaspoon of vanilla extract. I mixed until just combined.

Next, I sifted in 3/4 of a cup of all purpose flour, 1 tablespoon of cocoa powder, and 1/4 of a teaspoon of salt.

I gently mixed in the flour until almost combined, some flour should remain visible.

Next I added in 4 ounces of semisweet chocolate chips and I stirred it lightly. Do not over mix the batter.

Lastly, I poured the batter into a lightly greased and floured brownie pan. I baked them for 28 minutes. I checked the brownies every 10 minutes. A toothpick should come out clean.

I recommend using parchment paper on the bottom of the pan for easy removal. They tend to stick a bit otherwise.

This was such a simple recipe and it is quick to prepare. I found it to be very moist, chewy, and packed with a rich chocolate flavor. The espresso and chocolate chips add hidden surprises to the tastebuds as you bite into these. This is great recipe for a simple yet delicious brownie.
